This Festive Drink – The Method

WThis is a simplified interpretation of a beverage found on a new cocktail list. This is a batch prepared mix that's bursting with the flavours of a holiday season, making it excellent for your festive gathering. Reserve the remaining citrus syrup for morning drinks, puddings, or for more rounds of this cocktail.

The Bikini Cocktail

Yields 10 guests

For the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Cocktail (yields 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Place every items inside a saucepan, bring to a gentle boil, agitating until the sugar dissolves. Next, remove from the heat allowing it to reach room temperature completely. Pour into a sterilised bottle, close it keeping it in the fridge, where it will keep for around a month.

Preparing the Premix: Mix all the liquids into one sizeable container, let it rest for 60 minutes, then strain best through cheesecloth, so it's perfectly clear.

To serve: Add 85ml of the premix into your mixing glass containing ice, and stir gently for about 60 seconds until cold. Pour into a cold coupe glass or similar, decorate with some cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
